We’ve all been there: you spend forty minutes roasting organic broccoli, only for it to be met with a look of pure betrayal. It’s exhausting trying to ensure our kids get the nutrients they need when they treat a piece of spinach like a personal insult. I’ve found that steaming cauliflower and blending it into mac and cheese sauce, or finely grating zucchini into muffin batter, works wonders. When you’re sneaking vegetables into food, start with “neutral” colors like cauliflower, parsnips, or peeled zucchini. They disappear into sauces and batters, leaving no trace for even the most eagle-eyed picky eaters to find.

  • Breakfast: Carrot Cake Pancakes (finely grated carrots and cinnamon).

  • Lunch: “Pink” Hummus Sandwiches (chickpeas blended with one roasted beet) on whole-grain bread.
